Observation (CORRECTED DURING INSPECTION): Staff were unaware of how to do manual dishwashing properly.
Corrective Action(s): Instructions for manual dishwashing using a two compartment sink:
1. Use sink #1 for washing and rinsing and sink #2 for sanitizing
2. Wash utensils and equipment with warm water and detergent in sink #1
3. Rinse utensils and equipment with clean warm water in sink #1
4. Fill sink #3 with bleach sanitizer (1L clean water and 1/2 teaspoon bleach)
5. Sanitize utensils and equipment in sink #3 by submerging completely for 2 minutes
6. Allow utensils and equipment to air dry before using
