A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; thermometers present; and temps recorded daily.
- High temperature dishwasher (in main kitchen) had rinse cycle temperature of 80.0C at the plate's surface, as per max/min thermometer.
- Virox and Oxivir sanitizing solutions used on surfaces.
- Quats sanitizer in spray bottles had strength of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with proteins below and separate from RTE foods; and all foods stored 6" off the floor on shelves and racks.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is great. Keep up the good work.
- No signs of pests. Professional pest company contracted to monitor for pests. Fly lights and gin boxes found in premises.
- Valid, FoodSafe certified staff present, or those with a recognized equivalent course.
- All surface and equipment are durable, smooth, sealed, cleanable and in good working order.
- All in order.
REMINDER
- The exhaust canopy and hood is due for its bi-annual cleaning this month, as per the service sticker. Ensure to schedule this with a professional company. |
