General sanitation is good.
- All hand washing stations supplied with cold/hot running water, soap, and single use paper towels in front, back kitchen area and staff washroom.
- All coolers (the walk-in cooler, sandwich prep cooler, display cooler, milk,eggs cooler are maintained at less than 4 C.
- Walk-in freezer is less than -18 C.
- Hot holding units at front and for soups and gravies is greater than 60 C.
- Three compartment sink available for manual dishwashing. Quat sanitizer available at 200ppm.
- High temperature dishwasher is measured at 78.3C at the plate's level during the final rinse cycle.
- Surface sanitizer available in spray bottles and in sanitizer buckets at 200 ppm QUAT solution.
- Dry storage area and food storage is satisfactory.
- No signs of pest activity is noted at the time of inspection.Traps are set.
