Three sink method for washing dishes in place. Quats sanitizer at 200 ppm Spray bottle for sanitizing at 200 ppm - changed daily. handwash stations all properly equipped. Cooling units below 4 C. Prep cooler upper insert volumes good. Changed often.60C. Hot holding units at 60 C. Recommend periodic shuffling of shaved meats to ensure all product stays at 60 c. General sanitation good at time of inspection. Covid 19 protocol in place. - No record keeping. Small staffing levels 2 to 3. *Recommend keeping records for 30 days until otherwise stated. - make sure max. occupancy signs in place. all other signage good.
