Observation (CORRECTED DURING INSPECTION): A large number of eggs was stored on the counter at room temperature. Discontinue this practice. Only a small number of eggs can be left at room temperature during cooking only. A different type of cooler may be required if this is observed in the future.
Corrective Action(s): Eggs moved to the cooler during the inspection.

Observation (CORRECTED DURING INSPECTION): The sanitizer bucket had 0 ppm chlorine and the spray bottle had over 200 ppm chlorine when tested. Use 1 tsp bleach per liter of water to achieve 100 ppm chlorine.

Observation (CORRECTED DURING INSPECTION): The back hand washing sink was obstructed by a garbage can. Do not store anything in front of, or inside handwashing sinks.

Observation: Install a thermometer in the storage room cooler. Ensure that all coolers have working thermometers as well.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Out of the four staff onsite at the time of the inspection, none of them had FoodSafe level 1 training. The requirement is that at least one person onsite at all times has FoodSafe level 1 training.

Comments

-A follow up inspection will take place next month.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher reached 75 C at the plate level.
Ice machine was kept clean.
No evidence of pests. Food was stored in pest proof containers. Pest control report to be emailed to the EHO.
General sanitation was satisfactory.
