Follow up to report MBEK-CJUTAH.
Coolers noted in violation 308 on previous report have been serviced.
Preparation cooler: 4 degrees C (upper inserts), 2 degrees C (main compartment).
Barista cooler: 4 degrees C.
Raw shell eggs are stored in lowest point in upright cooler (not stored above ready-to-eat items).
Back door observed to be closed.
General sanitation has improved since previous inspection. Note: Painted wooden shelving located to right of dishwasher may require refinishing to ensure surfaces are smooth, non-absorbent, easy to clean, and suitable for the intended purpose. Finish is starting to show signs of wear.
Outstanding: High temperature dishwasher has been serviced (report is available, >71 degrees C noted at the utensil surface). However, dishwasher was measuring only 63 to 69 degrees C at the time of inspection. Note: Dishwasher was run for multiple cycles, and dishwasher was allowed to rest for a period of time between some cycles. Cafe manager contacted dishwasher technician during inspection for dishwasher to be re-inspected and re-serviced as necessary. In the interim, ensure only single use utensils are in use for customers and items that are run through the dishwasher receive a final sanitizing step (100 to 200 ppm chlorine - bleach water sanitizer). Follow up inspection to be conducted for dishwasher.
