Observation (CORRECTED DURING INSPECTION): Observed BBQ lamb (internal temperature 55C) and BBQ rib (internal temperature 57C) in a temperature danger zone. BBQ meats cooked ~3 hours ago. Operator was directed to reheat the foods (>74C for 15 sec) and sell them within the next hour. Any leftover to be discarded.

Observation (CORRECTED DURING INSPECTION): Observed lettuce being cleaned by submersion in the first basin and food contact surfaces in the second basin with soapy water. Do not wash vegetables near soiled food contact surfaces/chemicals. Lettuce was washed and removed from the basin at this time.

Routine inspection conducted:
Hand washing stations fully equipped with hot and cold running water, liquid soap and paper towels.
General sanitation is adequate.
Coolers measured at 4C or less.
Freezers measured at adequate temperature - foods stored in frozen state.
Hot holding measured at 60C or higher (see an exception in the violation section).
Temperature log available and in use.
No sign of recent pest activity noted at this time.
Food contact surface sanitizer measured at 200 ppm QUATs as per test strips.
In use utensils are in a clean empty container and changed every 2 hours.
