Note:
- Operators met with two Environmental Health Officers in the Surrey Health Protection Office on June 25, 2022. The following was discussed:
Revisions required of the Food Safety Plan for BBQ Duck and Honey BBQ Pork to include time tracking procedures.
How to implement time tracking for the products in the hot holding unit.
How to document time tracking procedures for the products in the hot holding unit.
- Operators emailed the updated Food Safety Plans to the Environmental Health Officer.

At the time of inspection:
- The internal temperature of BBQ Duck measured at 48.9 degrees Celsius. Product was placed in approximately 45 minutes earlier.
- The internal temperature of Honey BBQ Pork measured at 54 degrees Celsius. Product was placed in approximately 45 minutes earlier.
- Operators presented time tracking log for the month of August which included the following information:
Date
"Put in time" = Time product placed into the hot holding unit
"Quantity" = Quantity placed into the hot holding unit
"Take out time" = Time product was taken out for reheating (only if product was not sold within 1.5-2 hours)
"Quantity" = Quantity that was reheated
"Take out time" = Time product was discarded (after reheating once and if not sold within the next 1.5-2 hours)
"Quantity" = Quantity that was discarded

The following requires your attention:
- Submit an updated Food Safety Plan for both the BBQ Duck and Honey BBQ Pork with the revisions discussed at the time of inspection. To be corrected by August 22, 2022.
- Ensure to include information for both products on the time tracking log: for BBQ Duck and Honey BBQ Pork.
