Observation (CORRECTED DURING INSPECTION): -Par-cooked broccoli and wieners was being held at room temperature with ice inside the container. Temperature of broccoli was 11C. Temperature of wiener was 12C.
Corrective Action(s): -Cooked vegetables are potentially hazardous and must be stored at 4C or less or 60C or higher. Discard product.

Observation: -Scoops in dry storage bins with handles in contact with products. In addition exterior/lip of tops of bins are dirty.
Corrective Action(s): -Remove scoops from bins, wash and sanitize and store in a manner that scoop handle does not come into contact with food product (ie. clean container outside of bin, in scoop holder within bin)

304 - Premises not free of pests [s. 26(a)]
Observation: -Mouse droppings noted along walls under shelving in dry storage room. Appear to be from previous issues.
Corrective Action(s): -Clean up droppings, sanitize area (completed at the time of the inspection) and continue to monitor for further activity. Pest Control report from September shown at the time of the inspection. Report does not indicate that there is rodent activity currently.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: -Bucket of (solid) ice in freezer. Appears to catching water discharge or leak from refrigeration equipment/components above.
Corrective Action(s): -Serviced/repaire walk-in freezer to address leak/discharge. Correction date: Nov. 1/17

Comments

-General sanitation is satisfactory. Floor is well maintained. Walls will soon require a thorough cleaning to remove splatter and debris at the base.
-Handsinks were supplied with liquid soap and paper towel
-Hot and cold running water present
-High temperature dishwasher met sanitizing temperature requirement. Final rinse was 76.9C at the dish surface as measured with a min/max thermometer.
-Wiping cloths stored in bleach sanitizer solution (100ppm chlorine)
-Walk-in cooler was at 1C. Raw meat was noted stored beneath ready to eat items to prevent contamination.
-Walk-in freezer was at -15C.
-Hot holding of soups, rice, sauces, congee was >60C
-Scoops and serving spoons for rice were stored in ice water.
-Under counter coolers were 4C or less. Thermometers present in coolers. Some containers were uncovered as they were in use for lunch service. Ensure containers are covered with tight fitting lids or food grade wrap after meal service/busy times.
*Discussed storage of food products on ice with Manager. At the time of the inspection all items were 4C or colder with the exception of the broccoli and wieners (noted in violation above). Food products must be maintained at 4C or colder. For products stored on ice, adherence to food safety procedures, frequent monitoring of temperature, limited quantities of food and frequent replenishing of ice are critical to ensure food products are always maintained at 4C or colder. Mechanical refrigeration/prep coolers should be in place to limit potential for temperature abuse.
-Manager showed probe thermometer being used to monitor food temperatures.
