Observation:
At time of inspection, the floor drains were plugged and pooling of water was present. Staff were in the process of mopping and vacuuming up the water. A maintenance person was present and determining the source of the back up.
Corrective Action(s):
- Mop/vacuum up all pooling water.
- Immediately stop using the dishwasher until the source of the back up is found, to minimize the amount of black water entering the waste pipes/drains.
- Wash and sanitize the floor, the lowest shelves and the items on these shelves, and the lower legs/wheels and surfaces of tables/equipment to remove any contaminants that may of come into contact with the pooling water.
- Use disposable dishware to serve food on, OR stack up dirty dishes until the dishwasher can be used, OR use the dishwasher in "Gordon Ramsey Kitchen" to wash and sanitize dishes.
- Contact a company to service the grease trap, this could be the source of the back up.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher was in use, as staff were instructed not to use it as the floor drains were plugged and water was pooling on the kitchen floor. Dirty dishware & cookware are being stacked up.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold wa ter.
- Quats sanitizer in spray bottles, utensil & cloth buckets had strength of 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor on racks, shelves, and pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Exhaust canopies and filters are clean and next service due this month, ensure to schedule them to be cleaned.
- No signs of pests.
- Valid FoodSafe Level 1 certified (or equivalent course) staff present.

**A follow-up inspection will occur next week to check the dishwasher is operating correctly, the source of the plug was found and fixed, and cleaning and sanitizing of the mentioned surfaces was completed.***
