Routine inspection conducted and the following were noted:
Walk-in cooler and stand up cooler at 4C
Walk-in freezer at -18C.
Hot holding unit not in use at the time.
Hand washing station satisfactory
All food items stored at least 6 inches off the ground and properly covered.
High temperature dishwasher achieved a final rinse temperature of 74C at plate level,. .
Quat solution stored in sanitizer bottle and concentration was at 200ppm.
General sanitation satisfactory.
Meat tomato sauce was being served for sloppy joe and internal cooked temperature was greater than 74C internal.
Temperature records maintained for cooking and cold holding.
