- All refrigeration at or below 4C.
- Dishwasher final rinse at dish surface at 50 ppm.
- Overall sanitation is satisfactory.
- Hand wash station equipped with Liquid Soap and paper towels. Please make sure that the hot water is running at the hand wash station for the bistro area.
- Quat sanitizer available for use. Ensure that the bottles are labelled accurately and the solution is available at 200 ppm. At the time of the inspection, the concentration was detected to be well over 200 ppm.
