Hand wash station supplied with soap and paper towels. Operator has new piece of pan cleaning equipment not yet installed. Please submit plans or specs. Dishwasher 50-100ppm chlorine. Cooler <4C. Freezer <-18C. Separation of personal items. Thawing ham - operator replaced with cold water during he inspection. Please change every 30min or thaw ahead in cooler at <4C. Not on floor. 4.9C at the time of inspection. Kitchen reasonably clean and free of pests at the time of inspection. Refer to inspection report No. 255858 for signatures.
