Observation (CORRECTED DURING INSPECTION): Cooler malfunctioning. Internal temperatures of food items found to be at 7 degrees Celsius.
CORRECTED DURING INSPECTION - items relocated to additional coolers.

Corrective Action(s): Ensure cooler unit is not used until cooler is able to maintain temperatures of less than or equal to 4 degrees Celsius.
All potentially hazardous food items are to remain in supplementary coolers until cooler unit is achieving and maintaining temperatures of less than or equal to 4 degrees Celsius.

Observation: Rice found in warming unit at internal temperatures of 44 degrees Celsius. The item was found not to be in direct contact with the hot holding unit. Item placed inside a plastic tub within the hot holding unit insert.
CORRECTED DURING INSPECTION - item reheated in microwave.

Corrective Action(s): Ensure hot holding units are used as per manufacturer's directions. The food items need to be maintained at temperatures of greater than or equal to 60 degrees Celsius.

Observation (CORRECTED DURING INSPECTION): Lack of sanitizer solution in food preparation areas upon arrival of EHO.

Rice paddle found to be stored in water at room temperature.

Corrective Action(s): Ensure both food preparation areas, front and back kitchen, have access and are using sanitizer solution throughout the day.
This does not include the sanitizer solution used for table tops.
Ensure rice paddles are stored in ice baths.

Observation: Rodent droppings observed. Facility currently has Pest Technician servicing facility.

Corrective Action(s): Ensure Pest Technician is aware of areas where rodent droppings were observed.
Inspect facility for points of entry for pests. Seal any holes.
Follow recommendations advised by Pest Control Company Technician.

Observation: Rodent droppings found in the following areas:
- Lower shelf of kitchen area
- Back area, next to exit door, under electrical panel.

Some grease and food debris build up observed under grill unit.

Corrective Action(s): Remove all dishes and equipment from lower shelves until rodent infestation is eliminated. Run dishware through dishwasher.
Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Follow recommendations advised by Pest Control Company Technician.

Ensure nightly cleaning staff are cleaning all areas of floor including those harder to reach areas under the grill and equipment.

Observation: Cooler unit malfunctioning.
Ambient air temperatures observed to be at 7-11 degrees Celsius in one of the two main under counter cooler units in front food preparation area.
Technician has been contacted for service today.

Do not use cooler unit until such time as cooler unit can achieve and maintain temperatures of less than or equal to 4 degrees Celsius.
