Observation: A preparation cooler was above 4 degrees C despite the repairs done to it. The manager mentioned that the prep. cooler would be replaced by next Tuesday. The preparation cooler did not contain any food inside of it.
Corrective Action(s): Ensure that the new commercial cooler will be maintained at a temperature of 4 degrees C or colder prior to storing any potentially hazardous food inside of it.

Follow-up Inspection:
-All of the refrigeration units were equipped with accurate thermometers.
-The backdoor was repaired to cover the gap.
-Fly traps were not observed over food preparation/storage and equipment storage areas.
-The scoop for ice cream was only used once today according to the manager. The scoop is being washed, rinsed, and sanitized after each use and the dry scoop is stored in a clean container in between use.
-200 ppm QUATS sanitizer was available inside the bucket. It was mentioned that sanitizer would only be dispensed from the dispenser and that the pink powder will no longer be used.

Thank you for making improvements. The next follow up inspection for the new preparation cooler will be next week.
