Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Magnet knife holder observed to be in unsanitary condition. Grease and food debris build-up was noticed. Knives, even after being cleaned and stored, contamination will occur. Utensil holders/storage spaces must be maintained in sanitary conditions at all times. Observed knives with food debris on them as well.
Correction: Required operator to remove all knives from the holder. Wash and sanitize them prior to use immediately. Magnet knife holder must be cleaned and sanitized before use.

Observation: Dishwasher not on at the time of inspection. When inquired, operator indicated that they turn on the dishwasher in the afternoon or evening after busy times. Operator did not have appropriate sanitizer available at the time of inspection either. Operator was instructed to create one immediately.
Correction: Required operator to prepare sanitizer to be used immediately. Until dishwasher can be confirmed to be functioning properly, manual dishwashing must be performed at the three-compartment sink.

Follow up inspection for JPAK-CD8QME
-Door handles have been cleaned
-Droppings in the corner have in cleaned; please continue with regular cleaning to monitor for activities
-All items in the cooler are covered and fan covers cleaned
-High temperature dishwasher in good working order; detected 71 C at plate level after final rinse cycle
-Bleach sanitizer available on site and in use; detected 200 ppm of chlorine
-Knife holder is now in sanitary condition, knives are in sanitary condition
