Observation: There is chicken thawing on trays in walk in cooler. The melted ice is leaking onto the shelf and floor and requires cleaning and sanitization.
Corrective Action(s): Restock thawing chicken into deeper containers to prevent leaking of thawing liquids. Wash and sanitize all shelving and floor surfaces where spill occurred. Ensure there is no cross contamination between raw protein and ready to eat foods in storage unit. Correction required today.

Comments

Premise overall is sanitary.
No signs of pest activity at the time of inspection. Pest control program in place.
Fly trap paper in use and is placed in locations to prevent food contamination - good.
Hot and cold water available.
Dedicated hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Washrooms are sanitary with fully stocked hand sinks.
Food is from an approved source.
Equipment in good working order.
Temperature holding is adequate and in use with accurate thermometers.
Take out containers and utensils are sanitary.
3-compartment sink in use. Quat sanitizer in use at 200 to 400 ppm in sani buckets.
Dishwasher final rinse at 50 to 100 ppm chlorine solution at the plate. Test strips available expiry 2025 - good.
Valid Permit posted in conspicuous location.

Holding units:
Coolers at 4C and below. Hot holding units at 60C to 65C. Rice unit at 68C.
Stand up freezer at -19C. Walk in cooler at 2.8C.
Front display cooler at 3C (chocolate milk).

Scoops and utensils in use are replaced with new clean ones at least every 2 hours to prevent growth of bacteria.

Recommendation: Ensure to keep up with general maintenance and repairs as needed, for example replacing damaged baseboards, loose panels to stand up freezer and replacement of worn wall FRPs.
