203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 40L of hot lental soup (68C surface temperature) observed to be cooled in a large container at room temperature. Operator informed that it will be cooled out at room temperature in the large container under exhaust hood vent for 20-30 minutes followed by transfer directly into the cooler.
Corrective Action(s): Transfer large container of lentil soup into smaller shallow container to be cooled under room temperature from 60C to 20C within 2 hours followed by direct transfer into cooling unit to be cooled from 20C to 4C within 4 hours. Afterwhich can be transfered into large cotainer for storage. Alternatively can cool using ice wand.

Observation (CORRECTED DURING INSPECTION): Can opener blade observed to have food debris build-up. Knivies observed to be displayed on magnetic holder observed to have food debris.
Corrective Action(s): Clean and sanitize the aformentioned item. Can opener blade and knivies must be cleaned and sanitized after each use or every 2 hours of continous use. If busy transfer to dishpit to be washed at a later time.

Observation (CORRECTED DURING INSPECTION): No prepared QUATs sanitizer available to sanitize food contact surfaces.
Corrective Action(s): Prepare QUATs sanitizer to measure 200ppm to sanitize food contact surfaces.

Observation: Food debris (black lentils, sugar, etc.) observed underneath the dry storage shelves and worktable and along the cooler/freezer seams. Grease and food buildup observed underneath the cookline.
Corrective Action(s): Clean and sanitize the aformentioned areas. Underneath the shelving racks and worktable, and cooler/freezer seams, staff have corrected at the time of inspection.

Submit pictures addressing the cleaning underneath the cookline. Corrected by: January 15, 2024.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs dispenser at 200ppm. 3-compartment sink available. High-temperature dishwasher measured at 72.1C final rinse temperature.
Prep coolers and stand-up cooler measured at 4C or lower. Stand-up freezer measured at -18C. Hot-holding units measured at 60C or higher.
Food observed to be stored at least 6 inches off the floor.
Exhaust hood vents observed to be satisfactory. Next service date of Jan 24, 2024.


NOTE: Ensure can opener blade is cleaned and sanitized after each use. If busy leave at dishpit to be washed and sanitized until able to. Do not leave on kitchen table for use if not cleaned.
