Specialized Food Processing: Donair Meats
-Cone (raw) is freshly prepped and stored in designated cooler, on the lowest shelf/bottom rack.
-Cone on spit is sliced as it cooks, secondary cook step was observed >74C; operator placed cooked pieces in warming unit, >60C.
-Approved Food Source - food ingredients are from an approved source, original packaging in coolers/freezers
-Food is stored in covered containers; food storage is organized in coolers

Maintenance and Sanitation
-3 Compartment Sink is fully supplied with 200ppm Quats for sanitizing
-Sanitizer bottles - have 200ppm Quats (400ppm measured)
-Storage of chemicals is separate and away from food
-Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
-Pest control - there are no signs of pests at the time of inspection.
