Observation: **REPEAT** Scoops observed to be stored in ingredient bins. Scoops should not be kept within ingredient bins as scoops must be cleaned and sanitized. Dirty scoops and handles pose a contamination risk to ingredients.

Observation: Hot holding unit by point of sales did not maintain temperatures throughout unit.
Top of unit measured 64.5°C, but bottom measured ~47°C.

**Corrected during inspection** unit temperature turned up; lower shelf units stated to be since this morning and < 4 hours.
Food product to be discarded after reaching 4 hours.

please ensure garbage can is easily accessible at all hand washing stations
bleach sanitizer is measured to be 100ppm

overall sanitation of department adequate

All items stored off floor
Soiled pans observed to be stored on bakery tray. Staff on shift stated items are cleaned end of day.

General:
No pest activity observed at time of inspection
Insulation material of oven noted to be behind oven. Staff stated pest control company confirmed there is no pest activity in area.
