Observation: Sole staff member on site was told not to use the dishwasher but rather to warewash. When questioned the staff member was not using a sanitizer after the wash step.
Corrective Action(s): Premises MUST always use the dishwasher for warewashing. Re wash all utensils as instructed.

Observation: Operating permit displayed not valid as it was the old permit from the previous operator. This was discarded at time of inspection

Observation: Massive number of rodent droppings observed on food preparation surfaces and throughout the entire premises.

Hire a pest control company to eliminate the mice currently inside the premises and prevent the mice from gaining entry to the premises. Mice were actively observed in the "Green room"
Once all food items have been discarded, new food items will need to be stored and secured in bins with tight fitting lids. Items such as flour and grains would be stored inside ie any item than can potentially be chewed into
