Observation (CORRECTED DURING INSPECTION): Yogurt stored in metal insert on ice was measured to be at 10C. Staff stated the yogurt had been out since before noon.
Corrective Action(s): Yogurt discarded at time of inspection. Cold potentially hazardous food must be held at 4C or colder. Ensure ice level is high enough so that the metal insert is submerged in the ice. If yogurt is above 4C, it must be discarded every 2 hours.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Freshly made quat sanitizer solution in three-compartment sink was between 50-100 ppm.
Corrective Action(s): Staff added more concentrated quats to sink at time of inspection. 200 ppm detected.
*Ensure to follow manufacturer's instructions for proper mixing measurements.
*Use test strips to monitor concentration of sanitizer solution

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): No liquid hand soap was available at designated hand washing sink.
Corrective Action(s): Staff stated the soap dispenser had been moved to the washroom, as the washroom soap dispenser stopped working. An extra supply of hand soap was available in the back storage area - staff supplied hand sink with soap.
**Ensure liquid soap is always available at all designated hand washing sinks.
**Install a soap dispenser at the hand sink beside the three-compartment sink.
**Repair soap dispenser in washroom

Observation (CORRECTED DURING INSPECTION): Several cutting boards were stained and highly grooved/scored.
Corrective Action(s): Replace cutting boards, as deep grooves/scores cannot be properly cleaned and sanitized. Staff removed cutting boards at time of inspection.

Comments

- Hand sinks were supplied with hot and cold running water and paper towels
- Quats sanitizer available in spray bottle at 200 ppm. **Ensure wiping cloths are also stored in sanitizer solution in designated bucket.
- All coolers were measured to be at or below 4C
- All freezers were measured to be at or below -18C
- Ice machine maintained in sanitary condition.
- Proper scoops being used
- General sanitation OK. *Ensure to clean insides of coolers regularly, including doors and door seals

A follow-up inspection will take place on April 11th For correction:
- New cutting boards required
- Soap dispenser to be installed at front hand sink
- Quat sanitizer solution must be at 200 ppm when being mixed in sink. Purchase test strips to monitor concentration.
- Wiping cloths must be stored in sanitizer solution in between uses
- Ensure yogurt held on ice is at 4C or colder, otherwise must be discarded every 2 hours and time-tracked with a log or time stamp.
- Clean interiors of all coolers
