Routine Inspection: General maintenance and sanitation excellent at the time of inspection. Hand washing stations supplied with liquid soap, paper towels and hot/cold running water. Cooler #1 (back) at 3.5 C. Cooler #2 (back) at 2.9 C. Note: Small prep.cooler is empty/not in use (not in a good working order).Please repair the prep.cooler or replace it. All freezers (domestic/chest) maintained below -18 C. Hot holding at 82.3 C. Domestic ventilation hoods and stove (2) - clean. Storage - well organized. All equipment stored in sanitary manner. Surface sanitizer (chlorine solution) at 100 ppm. Bleach available on-site. Low temperature dishwasher sanitizing with 50 ppm chlorine. No signs of pest activity at the time of inspection.
