Observation: Rolling racks where chicken and potato wedges were cooling did not have cover.
Corrective Action(s): Provide rolling rack covers to protect food from contamination.

Observation: Some areas of the floor (underneath equipment) and kitchen walls and inside walk-in cooler had dirt and debris build up.
Corrective Action(s): Sweep and mop thoroughly underneath equipment (i.e. upright freezer, underneath 3 comp sink, inside walk-in cooler,etc.) and also degreaser may need to be used to clean floor thoroughly as well as the walls.

Comments

Hand sinks equipped with liquid soap and paper towels.
Sanitizer (quats) measured 200 ppm.
Upright freezer was at -16 deg C (constant open/close). Ensure freezer temp goes down to -18 deg C.
Walk-in cooler and prep line coolers were at or below 4 deg C.
Hot holding for gravy and chicken was at or above 60 deg C.
Temperature log was available. Ensure paper work is organized and kept up to date.
Front service:
Hand sink provided with liquid soap and paper towels.
Display cooler was at 2-3 deg C.
Sanitizer available at 200 ppm.
Washrooms were in sanitary condition.
Pest control monitoring in place. No issues with pests.
