Observation:
The light fixures in the back, dry packaging area do NOT have covers on them. If the light bulbs break/burst glass will fall into food.
Corrective Action(s):
Install light covers on each fixture, or install clear plastic covers on all the light bulbs to prevent glass from falling into food.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation (CORRECTED DURING INSPECTION):
During the inspection, the door into the food processing area was propped open. This will allow the entrance of pests into the facility.
Corrective Action(s):
Immediately close the door and stop propping the door open. All open doors and windows must have screens installed on them to prevent the entry of pests. Install a screen door or air curtain on the door. During the inspection, operator closed door.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
The walls made of drywall have a space at the base between the floor and wall. Food and water will accumulate in this space and attract pests, and will cause water damage to the wall.
Corrective Action(s):
Install coving along the base of all walls made of drywall, in all food processing and storage areas to prevent pests harborage areas, and to encourage easier cleaning.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The hand washing sink faucet is loose and not secured to the sink. Water may start pooling and leaking under the sink, this will attract and harbor pests.
2) The mop sink waste pipe is broken and water is pooling on the floor. The pooling water will attract and harbor pests.
Corrective Action(s): 1) Secure and seal the faucet to the sink to prevent water leaking and pooling.
2) Repair or replace the broken waste pipe so it doesn't leak and mop up the pooling water.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C of colder; freezers -17C or colder; hot holding units 78C or hotter; thermometers present; and temp. recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer used and strength was 200ppm. Test strips present.
- Foods stored in groups; 6" off the floor; and labeled.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests. Monthly monitoring being done by a professional company. Rodent activity noted outside of premises in the last month.
- FoodSafe certified staff present.
- Staff use disposable gloves correctly. Gloves are discarded once removed from hands (not saved in pocket), and gloves changed when changing tasks. Staff wash hands prior to putting on a new pair of gloves.
- FSP and SP received and approved.
**A follow-up inspection to be conducted on Nov. 8/17 to ensure all violations have been corrected.**
