Observation (CORRECTED DURING INSPECTION): Surface sanitizer in spray bottles measured at 0ppm QUAT concentration. The sanitizer from the premeasured dispensing unit measured at 0ppm QUAT concentration. This is inadequate to sanitize food contact surfaces.
Corrective Action(s): Use bleach sanitizer as your primary surface sanitizer in the meantime. The bleach sanitizer must be min 100ppm chlorine concentration:
- 1 tbsp bleach/1 gallon
- 1 tsp bleach/1 litre

Comments

- General sanitation satisfactory.
- Three compartment sink is available in the main kitchen for manual dishwashing. Sanitizer available at 100ppm chlorine concentration.
- Low temperature dishwasher (bar area) dispensed 50ppm chlorine sanitizer at 45C at the plate's level.
- Low temperature glasswasher (bar area) dispensed 100ppm chlorine sanitizer.
- Dry storage area has adequate space and wire racks. Dry food items must be stored min 15cm (6inches) off the floor.
- No signs of pest activity at the time of the inspection. A professional pest control company inspects monthly.
- FOODSAFE trained staff on duty.

Temperature control:
- All coolers: < or = 4C
- All freezers: < or = -18C
- Hot holding units > or = 60C
- Thermometers available in all coolers and freezers.
- Daily temperature logs must be kept up to date.
