Observation: Cardboard was lining shelving units inside the walk-in-cooler, which is not made of easy to clean, impermeable to moisture, and durable materials.
Corrective Action(s): Remove the cardboard as it is not made of easy to clean, durable, impermeable to moisture, and non-toxic materials. This will help improve air circulation inside the walk-in-cooler as well. Correct by December 11, 2018.

501 - Operator does not have FOODSAFE Level 1 or Equivalent [s. 10(1)]
Observation: Manager did not have their FOODSAFE certificate on-site and stated they had a misspelled surname in the FOODSAFE Registry. It seems that they had taken FOODSAFE Level 1 in July of 2007 based on the FOODSAFE Registry. FOODSAFE level 1 certificates from courses taken before July 29, 2013 expired on July 29, 2018.
Corrective Action(s): Please visit a local health protection office with government issued photo ID to correct your record in the FOODSAFE Registry. Retake a FOODSAFE Level 1 course to recertify your FOODSAFE training; Correct by December 31, 2018. Provide a copy of your valid FOODSAFE level 1 certificate to the district Environmental Health Officer of Fraser Health.

Front Area:
-Handsink was supplied with liquid soap, hot and cold running, and paper towels.
-Paper towel dispenser was in working order.
-Coolers were at or below 4 degrees C. Thermometers were in good working order.
-Freezer temperature was satisfactory.
-Hot-held food (hot dog wieners, chicken, pizza, etc.) was at or above 60 degrees C.
-Hot-holding unit were maintained at or above 60 degrees C.
-A probe thermometer was available.
-Permit to Operate was posted.
-200 ppm QUATS sanitizer was available in a spray bottle.

Back Areas:
-Handsink was supplied with liquid soap, hot and cold running water, and paper towels.
-200 ppm QUATS sanitizer was available from both dispensers at the two 3-compartment sinks.
-Cooler was at or below 4 degrees C.
-Freezers were at or below -18 degrees C.
-No signs of recent pest activity were evident at the time of inspection.
-Ventilation hood was in a clean condition at the time of inspection.

Store Area:
-Walk-in-cooler and other coolers were at or below 4 degrees C.
-Freezers were at or below -18 degrees C.
-Handles and drip tray of the sushie machine are cleaned and sanitized every night according to the Manager.
-The inside of these slushie machines is cleaned and sanitized on a monthly basis and is contracted out according to the Manager.
