Observation (CORRECTED DURING INSPECTION):
- Sliced tomatoes and onions in inserts sitting on the ice. The internal temperature above 8C.
Corrective Action(s):
- Discarded the aformentioned foods immediately.
- Make sure the inserts have to be fully submerged in ice.

- Mildew built up on the plastic board inside the ice machine.
Corrective Action(s): - Empty the ice machine, and clean and sanitize the interior. Make sure no grime built up.

Comments

Routine inspection conducted with 3 staff.

- General sanitaiton was satisfactory.
- Hand wash stations were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Washrooms were in sanitary condition.
- Walk-in coolers and undercounter coolers were at 4C or less
- Hot-holding inserts maintained at 60C or higher.
- Walk-in freezer at -21C. Stand-up freezer units varied from -17 to -22.5C
- QUATS dispenser releases QUATS at 200 ppm.
- Ventilation canopy in satisfactory sanitary condition. Next canopies cleaning is scheduled in January 2023.
- Food products stored at least 6" off the floor
- No visible signs of rodent activity observed at time of inspection

Note: (1) the sanitizing pails must be changed at least once every 2 hours.
(2) Ensure Spray bottles filled with 200ppm Quats available at all the food contact surfaces.
(3) Make sure the lids of the ice cream toppings fully covered to prevent flies harborage.
(4) Test strips for QUATS availavle by the dispensing station. Ensure that it is in use daily and Quats concentration must be verified daily.
