Observation (CORRECTED DURING INSPECTION): Raw cut fries observed to be stored under room temperature. Operator informed that it has been stored under room temperature for 2 hours during the lunch rush. Cakes stored in a display cooler at the front measured at an air ambient temperature of 6.8C. Operator informed that the cakes have been stored in the display cooler at the front for 2 hours.
Corrective Action(s): Place the raw cut fries in a cooling unit able to hold an air ambient temperature of 4C or lower. Store the cakes in a cooling unit able to hold an air ambient temperature of 4C or lower. Cakes that are stored above 4C for lunch rush must be discarded after 4 hours. All potentially hazardous foods (e.g.: cakes and raw cut fries) must be stored in a cooling unit able to hold an air ambient temperature of 4C or lower.

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs dispenser and spray bottles measured at 200ppm. 2-compartment sink available. High-temperature dishwasher final rinse temperature measured at 187F at the manifold.
Prep coolers, stand-up coolers, and walk-in cooler measured at 4C or lower. Walk-in freezer measured at -18C. Hot-holding units measured at 60C or higher.
Food stored at least 6 inches off the floor in the walk-in cooler, wlak-in freezer, and dry storage.
No signs of pests observed.

NOTE: Please erect hand sanitizer signs at self-serve stations. Ensure that temperature logs are daily maintained. Temperature logs observed to be sporadically maintained.

Overall, facility is well organized.
