Cooling units all less than 4 C. Good product separation between RTE and raw product.
Freezers less than -18 C. OK.
Quats at source measured at 200 ppm and in spray bottles 200 ppm. OK.
Handwash stations stocked, but front station lacks paper towels. Even a basket with available paper towels recommended.
**Still recommend a quats spray bottle be located in front for easy spot disinfection.
Lighting in walk-in cooler could be stronger. There are good and bright LED's available on market.
Ensure SOP's for clean-up on cutting surfaces are maintained.
