209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Sliced mushrooms were stored in the box with paper towel that it orginally came in.
2. Two light fixtures in the back prep area noted with no light shields.
Corrective Action(s): 1. **Issue corrected at the time of inspection** Staff moved the sliced mushrooms to a food-grade container. Do not store any processed (chopped, washed, cooked, etc.) food in a non-food grade container that cannot be washed or sanitized.
2. Replace the missing light shields or purchase protective sleeves for the exposed light bulbs.

Observation: 1. Debris noted on the floor in the front prep area below the 2 microwaves.
2. Debris noted on the main dishmachine - top and side.
3. Black buildup still noted on the wall behind the main dish machine.
Corrective Action(s): Clean and sanitize the abovementioned areas and maintain in a sanitary condition at all time.

Comments

Routine inspection conducted today:
Handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Food stored protected and in the proper storage hierarchy
Sanitizer spray bottle and sanitizer containers holding in-use wiping cloths were all noted with 200 PPM chlorine residual - excellent practice.
High temperature dish machine in both the bar and main areas are functioning properly - 72.5C rinse temperature for main machine and 71.0C rinse temperature for the bar machine.
No signs of pest activities noted during the inspection.

Note: At the time of inspection, the operator was not onsite. The person-in-charge mentioned that she has a valid FOODSAFE level 1 certificate, this will be verified. Operator's FOODSAFE level 1 certificate has also expired on July 24, 2023 - the validity will also be verified. The area Health Inspector will reach out to the operator if noted both the staff AND/ OR the operator's FOODSAFE certificate has expired. It is a requirement for the operator and a staff on-shift at all time during food preparation and regular business hours to have a valid FOODSAFE level 1 or equivalent certificate.
