Observation:
Mice droppings found on the back room shelves, where open bags of dry bulk foods are stored. Rodent droppings carry germs.
Corrective Action(s):
- Clean up the mice droppings and sanitize all surfaces that came into contact with the droppings.
- Place all open bags of bulk foods into large totes/bins and cover with tight lids, to prevent access to pests.

Comments

A routine inspection was completed:
- Dairy walk-in-cooler 2C; store walk-in-freezer -23; retail coolers 3C or colder; retail freezers -21C or colder; outdoor upright freezers (customer pick-up) were -25C; thermometers present; and temps electronically monitored.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles and 3-comp sink had strength of 200ppm. Test strips present.
- High temperature dishwasher (for Bulk Food section) had a rinse temperature of 79.8C at the plate's surface, as per max/min thermometer.
- Adequate number of scoops and tongs present in bulk bin area.
- All foods stored in groups; and foods stored 6" off the floor on shelves, racks or pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- Non-food items (cleaners, pet foods, stationary, beauty products, etc.) are stored away and/or separately from food items.
- General sanitation level is good.
- All surfaces and equipment are in good working order.

Produce Dept processing room
- Produce walk-in-cooler 4C; retail coolers 4C or colder; thermometers present; and temps electronically monitored.

ACTION
Accumulated debris under black pallets in back Produce Dept area. The black pallets store potatoes and tomatoes. Increase the frequency these areas are swept to eliminate food source for pests.
Mice dropping observed around the open bags of dry foods, in the Bulk Food storage shelves. Clean up the droppings and sanitize surfaces that came into contact with the droppings. Store all open bags of dried foods in large totes/bins and place a tight fitting lid on it to keep pests out.
