Observation (CORRECTED DURING INSPECTION): Meat saw is only cleaned and sanitized once a day, at the end of the day. Meat saw is used continuously at room temperature, therefore it must be cleaned and sanitized every 4 hours, or more frequently. This was discussed with operator. Meat saw was disassembled and cleaning was in the process at time of inspection. It needs to be completely dissassembled at least twice a day from now on.

Comments

Previously mentioned violations have been addressed:
- Display cooler temperature 1.0 deg. C. Food items can now be stored in this cooler. Cooler temperature templates provided. Operator to keep written temperature records for coolers, freezers to ensure these units are able to keep foods at a safe temperature at all times.
- Hand sink stocked with liquid soap, paper towel and hot and cold water.
- Bleach sanitizer available at 100 ppm.
- Door latch on walk-in cooler has been repaired.
- Mouse droppings cleaned up underneath front table
- Pest control company contacted and on-site on June 9th. Maintain monthly service for at least another 2 months. Follow all recommendations by pest control company. Keep invoices on-site for next inspector to review.

Still outstanding:
- cleaning up mouse droppings under display cooler. Correction date: June 12th
- obtaining shield for lightbulb in walk-in cooler. Correction date: 1 week
- replacing door seal on walk-in cooler: 1 month
