Observation (CORRECTED DURING INSPECTION): Chicken donair cooker was turned off at time of inspection; chicken cone was 40 degrees Celsius internal temperature. This is a very dangerous practice. Once the cone starts cooking it MUST be fully cooked. The temperature must not be turned down until all of the chicken is cooked. Chicken cone was discarded; approximately 12-15 lb. A copy of the provincial donair guideline was printed and left with the operator. Read the guideline and call or email if you have any questions.

Observation (CORRECTED DURING INSPECTION): 1) Dishwasher had no sanitizer in the final rinse at start of inspection. Repaired before end of inspection and 100 ppm was measured in the final rinse.
2) No sanitizer for cloths was prepared at the start of inspection. Sanitizer bucket was prepared, 100 ppm chlorine. Always have cloth sanitizer on hand.

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Hot water tank is only 30 Gallons, domestic grade. 3000 watts, one element.
Each sink compartment requires at least 12 gallons to fill just over half way, for a minimum of 36 gallons required. Your hot water tanks can only give about 22.5 gallonsof hot water max, and has a recovery rate of only 12-14 gallons per hour. You need to upgrade your hot water system. Call or email me before you choose a system. You can try an on-demand system or a minimum of 50 gallons total tank storage and at least 30 gallons per hour recovery rate total.
