304 - Premises not free of pests [s. 26(a)] Observation: Mouse droppings observed in the front of the restaurant around the ice machine. Corrective Action(s): Clean the droppings with a 100 ppm bleach solution, seal all entry points with steel wool and contract the services of a professional pest control company within 2 weeks. Violation Score: 9 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Clean the grease buildup underneath the cook line (completed during the inspection) and on the ventilation hood. Comments

Hand sinks were supplied with hot and cold water, soap and paper towels. All coolers were < 4 C. All freezers were < -18 C. Hot held foods were > 60 C. The 3-compartment sink was in use and had 100 ppm chlorine. Ice machines were clean. Reviewed cooling practices for foods that are prepared in advance. Storage room: Cooler was < 4 C. Freezer was < -18 C. Food storage practices were satisfactory. -A follow up inspection will take place in two weeks for the above noted violations.
