- Refrigeration temperatures are ≤4o Celsius
- Freezer temperatures are ≤-18o Celsius
- Hot-holding temperatures are ≥60o Celsius
- Chemical-sanitizing dishwasher providing ≥50ppm chlorine residual during rinse cycle
- Facility appears clean and well-organized

*Note: Ensure to store ice scoop in a manner which prevents the handle from touching the ice (ie. store outside the ice bin in a clean container when not in use)
*Discussed use of sanitizing chemicals for food contact surfaces:
-->The Spic N Span product requires that food contact surfaces are rinsed after sanitizing with this chemical.
-->As an alternative, consider using a chlorine (ie. bleach) solution at 100ppm concentration (1 oz bleach per 4Litres of water). The chlorine solution does not require food contact surfaces to be rinsed after use.
