**Note: When soaking rice, this must be done in a refrigeration unit at 4C or colder. Rice must not soak in water left out at room temperature.

- Sushi area was not in production at time of inspection
- All coolers were measured to be at or below 4C
- Three-compartment sinks were available for manual warewashing
- Quats sanitizer solution available at 200 ppm from dispensers. Ensure spray bottles/sanitizer buckets are available for use when sushi bar is in operation.
- Food storage practices satisfactory
- No sign of pest activity noted at time of inspection
