Observation (CORRECTED DURING INSPECTION): Leftover rice is reheated using the rice cooker's "keep warm" function. Temperature appears to be maintained at approximately 56°C.
Corrective Action(s): Reheat leftover foods in microwave to 74°C if it will be hot held.

Observation (CORRECTED DURING INSPECTION): 1. Containers of perishable foods (chopped vegetables, meats, cheese, etc) stored in walk-in cooler at approximately 9-10°C.
2. Food inserts at prep cooler were overfilled. Tops measured 9-10°C.
Corrective Action(s): 1. Discard all perishable foods in the walk-in cooler that have been stored at 4°C for more than 4 hours.
2. Reduce the amount of food in the inserts. Ensure inserts are only about half to 3/4 full to maintain temperatures less than 4°C.

Observation (CORRECTED DURING INSPECTION): Quat sanitizer spray bottle measured greater than 400 ppm.
Corrective Action(s): Discard and prepare Quat sanitizer fresh at 200 ppm.

Observation: Old mice droppings observed in shelving next to prep cooler.
Corrective Action(s): Clean up droppings and sanitize affected surfaces. Correct as soon as possible.

Observation: Walk-in cooler ambient temperature measured 9-10°C.
Corrective Action(s): Service the walk-in cooler so it is able to maintain ambient temperatures of 4°C or less. Do not use walk-in cooler for storing any perishable foods (chopped vegetables, meats, dairy, etc). Service for the walk-in cooler was arranged during inspection and will arrive later today.
