301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): One large baking tray at the bottom of the wire storage shelf observed contaminated with rodent dropping. Operator removed the baking tray to be cleaned and sanitized during inspection.
Corrective Action(s): Inspect all equipment and utensils daily to ensure they are not contaminated and maintained in sanitary condition. Clean and sanitize any equipment which has not be sanitized properly and/or which has been visablly re-contaminated after cleaning.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): [REPEAT VIOLATION] Unlabelled spray bottle measured at 0 ppm chlorine concentration with test strip. Staff stated that the previous inspector advised them to use vinegar in the spray bottle instead of bleach sanitizer. No record available for verification of this statement from operator. Previous two routine inspection reports available from Fraser Health state this as a repeated violation. Operator prepared bleach sanitizer at a concentration of 200 ppm chlorine during inspection.
Corrective Action(s): DO NOT use vinegar as it is NOT an approved food contact surface sanitizer. Use only bleach sanitizer at a concentration of 100-200 (or as per approved sanitation plan) by mixing 1/2 teaspoon of bleach with 1L of water. Failure to comply in future may lead to progressive enforcement (Order/Ticketing).

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed in following areas:
- In the bottom corner of the back storage area, on top of the plastic cover used for the cookie trays.
- On equipment placed on the bottom shelf of the wire shelving unit

Rodent traps are observed in place throughout the premise. Operator stated that a professional pest control company is contracted to complete inspections twice per month.
Corrective Action(s): Clean up all rodent droppings with appropriate PPE (mask and gloves). Spray down droppings and wipe up. DO NOT vacuum or sweep droppings. Use 1 part bleach with 9 parts water to sanitize all affected areas. Monitor rodent activity and if rodent droppings are sighted, contact pest control company immediately to place traps/treatment as necessary. Ensure back door remains closed at all times to prevent rodent entry on site. Remove all clutter and items which are placed directly on the floor to adequately monitor new rodent activity and to facilitate proper, frequeny cleaning of hard to reach areas. Keep all foods covered and protected from potential contamination. Submit future pest reports to the health inspector for review via email.

- 3-compartment sink available with drain plugs and bleach for manual ware washing
- All food at least 6 inches off the floor. Operator stated that prepared uncovered cookies are boxed after preparation and cooling.
- Professional pest control company is contracted
- FOODSAFE Level 1 trained operator available on site
- Health permit posted in a conspicuous location on site
