311 - Premises not maintained as per approved plans [s. 6(1)(b)] Observation: There was a pool of water on the floor near the pan washer and walk-in. The floor drain in front of the walk-in and the one by the sushi cooler were not draining. As a result, the pan washer temperature could not be checked. Corrective Action(s): Find the source of the water leak and get it fixed. Address the floor drain drainage issue. Pan washer temperature to be checked during the follow-up inspection. Violation Score: 5

General Notes: - Sanitizer spray bottle had 200 ppm Quats; both 3-compartment sinks are equipped with 200ppm Quats. - Both handsinks are fully equipped - The walk-in freezer was at -18 Degrees Celsius or lower - All coolers were at 4 Degrees Celsius or lower - Hot foods were held above 60 degC (chicken probed at 65 degC) -Temperature log was being maintained. -Pest control is on contract.
