Observation (CORRECTED DURING INSPECTION):
Concentration of QUAT sanitizer in three spray bottles (two in back and one in front) = 0 ppm. THIS IS A REPEATED VIOLATION.

Staff member tried measuring the concentration with test strips available in the facility, however adequate concentration was not detected after several attempts. Staff member proceeded to refill bottles from back chemical storage room (near washroom), but the sanitizer concentration still read 0 ppm.
Corrective Action(s):
Refill sanitizer spray bottles from sanitizer dispenser at 2-compartment sink.

Observation:
The QUAT sanitizer dispenser in back chemical storage room (near washroom) is not dispensing proper concentration of sanitizer.
Corrective Action(s):
Repair/service sanitizer dispenser in back chemical storage room. In the meantime, use the dispenser at the 2-compartment sink for the sanitizer. Ensure equipment and food contact surfaces are sanitized using 200 ppm QUATs after being cleaned.

Routine Inspection:

Back:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Stand-up cooler = 1.9 degrees Celsius
- Stand-up freezer = -21 degrees Celsius
- Proper thawing method observed at the time of inspection under cold running water.
- High temperature dishwasher sanitizing with 77.9 degrees Celsius at dish level after final rinse cycle.
- 2-compartment sink available for manual warewashing. Sink plugs available.
- Concentration of QUAT sanitizer at 2-compartment sink dispenser = 200 ppm.
- Test strips available to measure concentration of sanitizer.

Front Area:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Ice machine maintained in a sanitary condition.
- Prep coolers and their inserts, and beverages cooler maintained below 4 degrees Celsius.
- Hot holding (for rice) maintained above 60 degrees Celsius.

Overall:
- Washroom clean and hand sink fully equipped with liquid soap, paper towels and hot/cold running water.
- No signs of pest activity at the time of inspection.
- Premises well lit.
- Dining area clean.
- All storage areas clean, organized and well maintained.
- Food stored at least 15 cm off the floor.
- Overall cleanliness satisfactory at the time of inspection.
- Staff demonstrated good hand washing frequency.
- Permit to Operate posted.

Repeated violations may lead to further progressive enforcement including a Correction Order, Closure Order and a Violation Ticket.
