Observation: High temperature dishwasher not achieving the minimum required temperature for rinse cycle. Technician had been contacted.
Corrective Action(s): Ensure the dishwasher is repaired so that the wash temperature is at 60-65'C and rinse temperature is at 82'C at manifold and 71'C at the plate level for at least 10 seconds. Until repaired, all dishwashing will be done using the Assisted Living dishwasher. All dishware to be re-washed/sanitized using this dishwasher, as previous months records (Sep-Oct) show that the dishwasher rinse temperature was rarely above 82'C at the manifold.

Observation: High temperature dishwasher has rinse temperature fluctuating. 4 consecutive measurements - 65.4'C, 68.1'C, 71.4'C and 68.8'C. Technician contacted for repair.
Corrective Action(s): Ensure the dishwasher is repaired so that the wash/rinse temperature stays above the minimum requirement temperature for EVERY cycle.

Routine inspection conducted:

-Handwash stations adequately supplied.
-Refrigeration temperatures within requirement; Temperature records maintained.
-General food storage practice food. Dry storage room satisfactory.
-Ventilation hood canopy serviced/maintained.
-200ppm QUAT available in buckets to hold wiping cloths.
-Professional pest control company contracted. Traps in place. No evidence of pest activity observed at this time.
-General sanitation of the facility good.

NOTE: Automated QUAT dispenser at the back 3-compartment sink will no longer be in use. To be removed. OK.
