Observation: 1. Prep cooler rubber seal has hardened and is currently peeling off.
2. Prep cooler has an ambient temperature of 8C. No potentially hazardous foods currently in prep cooler.
Corrective Action(s): 1. Replace the rubber seal to ensure that your coolers work in good working order, and to prevent cold air from escaping.
2. Adjust the prep cooler so that it reaches a temperature of 4C or less.

Comments

Routine inspection conducted. Facility is in very good sanitary condition. The following observations were made:

1. Temperatures
- Cooling wells at 4C
- Walk-in cooler at 2C
- Walk-in freezer at -20C
- Thermometers present on cooling units
- Hot-holding pizza warmer and chafing dishes not in operation at time of inspection

2. Hygiene and Sanitizing
- Bleach sanitizer spray bottle at 200 ppm
- Handwash stations (2 in kitchen, 1 in washroom) adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Utensils, trays, kitchen equipment generally in good sanitary condition
- 3-compartment sink present with drain plugs, operator able to demonstrate how to make a 200 ppm chlorine residual sanitizer solution

3. Storage
- All food items in original packaging or inside food-grade containers, stored at least 6" off floor
- Raw frozen foods stored separately from cooked and ready-to-eat foods
- Chemical storage segregated from food preparation areas

4. Pests
- No signs of recent pest activity at time of inspection
- Back door securely shut, no harbourage sites observed

5. Administrative
- Operator has FoodSafe 1 (expiry: July 29, 2018). Ensure that you take a Level 1 Refresher Course at www.foodsafe.ca prior to this date
