- handwashing stations stocked with soap, paper towels, hot and cold running water - dishwasher dispenses 50ppm chlorine - sanitizer measured 200ppm quats; recommend replacing sprayer head as it is not spraying properly - all foods prepared in commissary kitchen attached - FOODSAFE requirements met - display cooler 4C* - under the counter cooler behind display cooler: 3C - other under the counter cooler: 4C - temperature logs available for review * Shaded portions of display cooler reached 4C; portions of the display cooler where the sun is shining through the windows and into the case were about 7C (no foods stored in unshaded portions). Recommend installing a shade on the side of the cooler to help temperatures stay at 4C or below.
