- Handsink maintained with hot & cold running water, liquid soap and paper towel - 200ppm QUAT sanitizers present - High temp dishwasher achieved 78C at plate's surface - Hot holding >60C - Coolers <4C and freezers <-18C - Cold holding for deli was broken at the moment. Staff were putting cold holding foods over ice for lunch hours only. - General sanitation is good - No signs of pest activity
