- Refrigeration temperatures are ≤4o Celsius
- Freezer temperatures are satisfactory
- Hot-holding units were not in use at time of inspection (pre-opening)
- Quaternary-ammonium food-contact surface sanitizer solution (Oasis 146) available at adequate (200-400ppm) concentration in spray bottles
- High-temp dishwasher achieved final rinse temperature of ≥71o Celsius (72.6C)
- Secondary dishwasher in the dishwashing area was 'turned-off' at time of inspection.
- No sanitation concerns identified during inspection
- No pest activity observed during inspection
* Unable to check operational status of bar glasswasher at time of inspection (machine was turned off and dissasembled). Iodophor sanitizer supply container is nearly empty. Ensure to replace the sanitizer chemical with a fresh container and confirm sanitizer concentration with a test strip prior to resuming use of the machine.
