Observation (CORRECTED DURING INSPECTION): Sanitizer solution was not available in meat processing area located on the right-hand side of the premises.
-Staff brought spray bottle with bleach solution.
-Ensure a sanitizer solution is readily available in all food prep areas to frequently sanitize food contact surfaces and minimize potential bacterial growth.
-Bleach solutions can be made to 100-200ppm chlorine using 1 tsp of bleach in 1 L of water.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): 1) Handsink in meat processing area (right-hand side of premises) was blocked with several equipment and utensils.
-Items removed at time of inspection.
-Handsinks are for handwashing only. Ensure handsinks are fully accessible to staff for frequent handwashing.

2) Designated handsink in refrigerated meat processing area did not have liquid soap.
-Staff refilled soap dispenser at time of inspection.
-Ensure handsinks in food prep areas are fully equipped with hot/cold running water, liquid soap, and paper towels for staff to properly and frequently wash their hands.

Comments

-Premises processes raw meat and sells prepackaged food in retail area.

-Coolers storing foods at or below 4C.
-Freezers storing foods at or below -18C.
-Handsinks have hot/cold running water, liquid soap, and paper towels. *See Code 401.
-Quats from dispenser measured 200ppm.
-No signs of pest activity at time of inspection.
-General sanitation is satisfactory.
-3 compartment manual dishwashing sink in refrigerated room. Sink plugs and quats dispenser available.
-Per staff, meat grinder equipment are washed and sanitized multiple times per day. Separate grinders are used for separate types of meats. *NOTE: Ensure equipment are sanitized at least every 4 hours or more frequently to minimize bacterial growth.

-No signature obtained due to COVID-19 protocols. Report printed and reviewed with staff on-site.
