304 - Premises not free of pests [s. 26(a)]
Observation: Severe mice infestation noticed in all areas of the restaurant namely-dry storage room, dishwashing areas, kitchen, back hallways, bar. Mice droppings were noticed inside a big package of lard as well as on several cans and other containers stored in the dry storage area.
In addition,live cockroaches were observed in the dishwashing area. Several glue traps with roaches were noticed in the dishwashing area. Pictures taken.
Corrective Action(s): The following actions must be taken by you with immediate effect.

1. A licensed pest control company has been hired by the landlord. According to the operator, weekly pest control visits are conducted by the pest control company for extermination of mice and cockroaches. Submit all recent inspection reports from the pest control company. (Immediately)
2. Throw all opened food items, dry food items ( flour, spices), cans and other food items as therse are all likely be contaminated from mice droppings and urine.
3.Clean floors throughout the restuarant in all areas, "nooks and craniees", undernealth all equipment and hard to reach areas to remove ALL MICE DROPPINGS. This includes removing any food and grease build up underneath the cookline, from each and every equipment, refrigerators, freezers, shelves and food related articles. Disinfect the floors and equipment with ppm chlorine bleach sanitizer.
4. All dry food items must be stored in tupperware containers with tight fitting lids and stored at least 6 inches off the floor.
ABSOLUTELY NO ITEM SHOULD BE STORED ON THE FLOOR as this helps with mice harborage.
5. REMOVE ANY AND ALL ITEMS THAT ARE NOT REQUIRED, TEMPORARILY RELCATE EXTRA UTENSILS, FOOD ITEMS AND OTHER ARTICLES AS THESE ALL HINDER WITH THE SUCCESS OF THE PEST CONTROL PROGRAM.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: The entire premises has extensive clutter and sanitation issues with helps with harborage and breeding of mice and cockroaches
Corrective Action(s): Following items must be addressed and rectified with immediate effect.
1. Remove all items as well as excess inventory that are not needed for the restaurant operation. Store all food items in tupperware containers.
2. Seal any holes on the exterior of the walls as well as any plumbing pipes to prevent entry of pests.
3. All items must be stored at least 6 inches off the floor.
4. Move all garbage dumpsters away from the walls.
5. Remove any junk and garbage from the hallways leading to the back entrance and washrooms.
6. Seal/patch any holes in the walls or floor wall junctions to discourage harborage of mice and cockroaches.
7. Ensure to seal or patch any gaps around the FPR wall panels in the dishwashing area.
8. Use a degreaser to remove any grease build up on the walls, window surfaces, equipment and floors to discourage pests.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build up of grease and food debris noticed throughout the restaurant.
Corrective Action(s): Thorough cleaning is required as discussed to bring the premises in a good sanitary condition.
This includes develioping a plan for a thorough cleaning every day to continue to keep the premises free of food debris and grease build up. ( Immediately)

A correction ORDER was issued.
The operator will voluntarily close the restaurant for the remainder of the day as well on July 21st to start working on the action items.
Failure to address the action items will result in further enforcement action including a closure ORDER.
