Observation: Kitchen manager stated that his FOODSAFE Level 1 certificate has expired and he has registered for FOODSAFE Level 1 course to be held in July.
Corrective Action(s): Ensure that at least one staff on duty has FOODSAFE Level 1 or equivalent during kitchen operation.

Comments

Routine inspection conducted at the school kitchen. At the time of inspection, the kitchen was not in operation.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Coolers (x2) maintained below 4C
- Stand up freezer at -14C
- Temperature logs were maintained.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Pest proof containers were used for bulk storage.
- Storage area was well-organized.

Sanitation & Maintenance:
- General sanitation of facility was satisfactory.
- Hand wash stations (x2) were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottles available (x2) and the concentration of QUATS noted at 200ppm.
- Low temp mechanical dishwasher used for ware washing and 50ppm chlorine residual recorded at rinse cycle.
- Utensils, ice machine and equipment were found in sanitary condition.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
