Observation: 1. Brown organic debris observed on the interior of ice machine on corners of black tray.
2. Stored clean meat slicer (covered) in kitchen area observed with dried food debris.
3. Soda gun in bar observed with long standing brown debris
4. Onion dicer observed with dried food debris stored clean on shelf in kitchen area. (Corrected during inspection)
5. Two cutting boards stored clean observed with long standing debris. (Corrected during inspection)
6. Counter mounted can opener observed with long standing red food debris on blade in kitchen area. (Corrected during inspection)
Corrective Action(s): To maintain equipment and food contact surfaces in sanitary condtion:
1. Discard all ice in ice machine and clean/sanitize the interior of the machine. To be corrected by next inspection.
2. Clean and santize meat slicer. To be completed by next inspection.
3. Remove nozzle and clean and sanitize soda gun nozzle. To be completed by next inspection.
4. Onion slicer, cutting boards, and can opener were cleaned and sanitized during inspection.
Ensure all food contact surfaces are cleaned after use and cleaned regularly to prevent cross contamination of foods.

Observation (CORRECTED DURING INSPECTION): Hand sink in back kitchen area observed with no paper towel.
Corrective Action(s): Paper towel was added to the dispenser. Ensure all hand sinks are stocked with soap and paper towel to allow for staff to adequately wash their hands.

Observation: 1. Scoop with handle observed submerged in sugar bin in kitchen area. (Corrected during inspection)
2. Brown organic debris in observed in the interior of the ice machine on sides of black tray holding ice.
Corrective Action(s): 1. Scoop was removed and placed to be washed. Ensure all scoops with handles are stored in a sanitary manner outside dry good bins to prevent cross contamination.
2. All ice in ice machine is to be discarded. Ensure ice machine is regularly cleaned and santized to prevent the accumulation of organic matter that can contaminate food and drink.

Observation: Staff during inspection could not provide proof of Food Safe Level 1 or its equivalent. Chef indicated that his Food Safe Level 1 had expired.
Corrective Action(s): Ensure at least one member on shift can provide proof of Food Safe Level 1 or its equivalent in the owners absence.

Corrections Needed:
- Dust build up observed around ceiling fan in kitchen area. Clean and remove all dust to maintain the premises in sanitary condition.
- Ensure all gaskets of refrigeration units are regularly cleaned to prevent the accumulation of food debris.
- Ensure written temperatures are recorded for all refrigeration units to ensure they are maintaining food safe temperatures.
